Puff pastry tartlets with cream cheese alternative

For the puff pastry cases:

Preparation
1. Preheat the oven to 200°C.
2. Cut the puff pastry into circles using a cookie cutter. Brush one circle with some plant drink, then place another circle on top and brush again with the milk alternative. Cut out a smaller circle from the centre of a third circle and place it on top of the other two circles. Repeat the process with the remaining puff pastry.
3. Bake for 10-15 minutes, or until the puff pastry has risen but is not yet fully baked. Press in the centre to create a well. Sprinkle the bedda grated cheese into the wells and bake for a further 5-10 minutes until the cheese alternative melts and the puff pastry cases are golden. Leave to cool before filling.
4. While the puff pastry cases are baking, prepare the filling. Mix the cream and milk alternative in a small mixer. Pour the mixtures into piping bags.
5. In a small bowl, mix the chickpeas, red onion, parsley, olive oil, tomatoes and season with a pinch of salt and pepper.
6. In another bowl, mix together the pesto, cherry tomatoes, basil, garlic, bedda feta cheese alternative and a pinch of salt and pepper.
7. Fill half of the bedda oriental date cream cheese alternative mixture into half of the puff pastry moulds. Top with the chickpea salad and spread the rest of the fresh oriental date mixture on top. Garnish with a few more chickpeas and chilli flakes.
8. Pour half of the bedda cream cheese alternative Mediterranean tomato mixture into the remaining moulds, then top with the pesto salad and finish with the remaining bedda Mediterranean tomato cream cheese alternative mixture. Garnish with more cherry tomatoes and fresh basil. Bedda wishes you bon appétit!
