Vegan meat loaf “bunny”

Ingredients

1 pc dry bread roll or 2 slices of white bread
1 Small onion, finely chopped
3 tb chopped parsley
2 tb olive oil
Some salt, to taste
Some freshly ground black pepper, to taste

For the decoration:

1 pc carrot (for the nose)
2 pc bay leaves (for the ears)
a few spaghetti (for the whiskers)
2 Slice(s) of radish (for the eyes)

Preparation

1. For this Easter recipe preheat the oven to 180°C. Tear the bread into small pieces. Peel and finely chop the onion. Chop the parsley. In a large bowl, mix the Redefine Mince, bread pieces, onion and parsley with olive oil, salt and pepper. Mix well and knead with your hands until smooth.
2. Pour the mixture into an ovenproof dish and shape into a loaf. Bake for 45 minutes until the Redefine Mince is cooked. Remove the loaf from the oven and leave to cool. Decorate with radish slices for the eyes, a piece of carrot for the nose, bay leaves for the ears and spaghetti for the whiskers.
3. Serve either cold for brunch or warm with mashed potatoes, white rice or a fresh green salad.
4. Tips: For added flavor, spices such as paprika, cumin or nutmeg can be added to the mixture.
