Vegan Spaetzle Pan with Mushrooms, Spinach, and Seitan

Ingredients

100 g leaf spinach
300 g mushrooms
1 pc onion
Some salt, pepper, nutmeg
tb parsley, fresh

Preparation

1. Chop the onion and mushrooms. Wash and drain the spinach. Heat some oil in a pan and sauté the onions until translucent.
2. Add seitan and mushrooms, and sauté briefly. Then, add the vegan spaetzle and fold in the spinach. Continue to sauté everything together.
3. Finally, deglaze with the vegan cream alternative and season with spices and fresh parsley to taste.
