Vegan Full Vegetable Tacos with Veggie Nuggets

Ingredients

1 tb olive oil
1 pc avocado
1 pc lime
1 pc carrot, medium-sized
1 Bunch(es) fresh cilantro

Preparation

1. Cut the tortillas into small tacos with a diameter of 15 cm using kitchen scissors. The trimmed pieces can be rolled up and enjoyed as a side snack.
2. Heat olive oil in a non-stick pan and sauté the vegan chicken nugget alternative over medium heat on both sides until they turn golden brown.
3. Peel the avocado, remove the pit, halve it, and slice it thinly. Peel the carrot and cut it into spirals using a spiralizer. Cut the vegan chicken nugget alternative into bite-sized pieces.
4. Fill the tacos with avocado slices, vegan chicken nugget alternative, and carrot spirals. Top with vegan mayonnaise alternative and garnish with cilantro leaves. Halve the lime and drizzle a few drops of lime juice over the tacos.
