Burger with Grilled Vegetables

Ingredients

4 Teaspoon(s) burger buns
2 Piece(s) red pepper
1 Piece(s) eggplant
1 Piece(s) zucchini
1 Piece(s) avocado
Some fresh cilantro or parsley

Preparation

1. In a bowl, roughly mash the avocado, season with salt and pepper, and add chopped fresh cilantro (or parsley).
2. Slice the bell pepper, eggplant, and zucchini. Sauté the vegetable slices in olive oil, season with salt and pepper.
3. Fry the burger patties in a bit of oil. Cut the buns in half. On the bottom halves, layer avocado spread, vegan cheese alternative, vegetables, and patties, then place the top halves of the buns on top. Serve with potato wedges.
