Preparation
Preparation:
1. Preheat the oven and prepare the pan: Preheat the oven to 175°C and lightly grease a loaf pan (approx. 23x13 cm).
2. Mix the wet ingredients: In a large bowl, thoroughly mix the pumpkin puree, liquid JUST Egg, oil, and white and brown sugar, breaking up any lumps.
3. Add the dry ingredients: Sift the flour, baking powder, baking soda, salt, and spices directly into the bowl with the wet ingredients. Stir the batter just until the flour is barely incorporated. Optionally, fold in walnuts or chocolate chips at this point.
4. Fill the pan: Spread the batter evenly in the loaf pan and sprinkle the top with raw pumpkin seeds.
5. Bake the pumpkin bread: Bake the bread for 65 to 75 minutes, until a toothpick inserted into the center comes out clean. Let it cool for at least 15 minutes before slicing.
