Preparation

1. Grate the potatoes and onion:
Peel and grate the potatoes—either using a food processor with a grating disc or simply with a box grater. Grate the onion. Squeeze out any excess liquid from the potatoes and onions using cheesecloth or a clean dish towel.
2. Mix all the ingredients:
In a large bowl, mix the grated potatoes and onions with Just Egg, flour, and salt.
3. Frying Latkes:
Heat 0.6 to 1.2 cm of oil in a deep skillet and line a plate with paper towels. Shape about 60 ml of the latke batter into a ball, drop it into the hot oil, and gently press it flat. Fry the latkes on both sides until golden brown, then let them drain on the paper towels. Serve warm.
