This olive oil is a special blend of two different varieties of olives. Taggiasca and Ogliarola olives are harvested early and bring a slight spiciness and bitterness to the mixture.

This makes Calvi’s moderately fruity Pinzimolio a special olive oil that’s perfect for cold dishes. This olive oil works particularly well in a vegan emulsion with vinegar, salt and pepper.
