Sandwich with Carrot Spaghetti

Ingredients

0.5 Clove(s) garlic
1 tb tahin
1 tb thyme
2.5 tb lemon juice
1 tb olive oil
1 Pinch(es) salt & pepper
150 g white beans
0.25 ts paprika powder, sweet
3 pc carrots
50 g arugula
8 Slice(s) whole grain bread

Preparation

1. Cut the beetroot into pieces for the hummus. Drain the chickpeas. Mix garlic, tahini, thyme, 2 tablespoons of lemon juice, and olive oil into a fine cream and season with salt and pepper.
2. Drain the beans. Puree them with tomato paste, 1/2 tablespoon of lemon juice, and creamy-mild spread. Season the bean spread with salt, pepper, and paprika powder.
3. For the carrot spaghetti, wash and peel the carrots. Process them into noodles using a spiralizer. Wash the arugula.
4. Spread the bread slices with the hummus cream. Place arugula on top, a slice of natural cheese, and cover with the carrot noodles. Fold 2 bread slices together to make a sandwich.
