Asian-style ravioli salad with sesame soy dressing

Ingredients

For the salad:

100 g edamame (peeled, frozen or fresh)
1 pc red pepper, cut into thin strips
2 pc carrots, cut into fine juliennes
1 pc cucumber, seeded and sliced into crescents
4 pc spring onions, cut into fine rings
1 Handful of fresh coriander or mint
50 g toasted cashews or peanuts
2 tb black and white sesame seeds, to sprinkle on top

For the sesame soy dressing:

3 tb soy sauce
2 tb rice vinegar
1 tb lime juice
1 tb maple or agave syrup
1 ts freshly grated ginger
1 Clove(s) of garlic, finely chopped
0.5 pc red chilli, finely chopped (according to taste)

Preparation

1. Cook the ravioli: Cook the ravioli in a pan of boiling salted water according to the packet instructions (about 4-5 minutes). Drain, rinse with cold water and leave to cool.
2. Make the dressing: In a bowl, whisk together the soy sauce, rice vinegar, sesame oil, lime juice and maple syrup. Add the ginger, garlic and chilli and mix well.
3. Prepare salad ingredients: Cook the edamame according to the instructions on the packet and allow to cool. Prepare the peppers, carrots, cucumber and spring onions.
4. Assemble the salad: In a large bowl, carefully combine the ravioli, edamame, peppers, carrots, cucumber and spring onions. Pour the dressing over the top and toss well to coat the ingredients evenly.
5. Arrange: Arrange the salad on plates or in a large bowl. Sprinkle with fresh herbs, toasted cashews or peanuts and sesame seeds.

Tip:

1. For an exotic touch, add fresh mango pieces to the salad. If you like it crispier, add crispy fried tofu cubes or sweet potato crisps. This ravioli salad combines the best of different cuisines and brings colour and flavour to your plate.
