Ravioli skewers with roasted pepper cream and herb garlic dip

For the ravioli skewers:

For the roasted pepper cream:

Preparation
Prepare the ravioli skewers:
1. Cook the ravioli in a large saucepan of salted water according to the instructions on the packet, drain and toss in 1 tbsp of olive oil to prevent them from sticking.
2. Marinate the zucchinis, peppers and onion pieces in a bowl with 2 tablespoons of olive oil, paprika powder, oregano, salt and pepper.
3. Thread the ravioli, courgettes, peppers and onion alternately onto the soaked wooden skewers.
Cream of roasted peppers:
1. Cut the red peppers in half, remove the seeds and place on a baking tray with the cut side down.
2. Roast at 220°C (top heat) until the skin blisters (about 10 minutes).
3. Remove the peppers from the oven, leave to cool briefly and peel.
4. Blend the peeled peppers with the garlic, olive oil, lemon juice, salt and pepper until smooth.
Herb garlic dip:
1. Mix the vegan yoghurt alternative with garlic, parsley, chives and lemon juice in a bowl. Season with salt and pepper and refrigerate.
Grill the ravioli skewers:
1. Fry the prepared skewers in a grill pan or on a grill over medium heat for about 2-3 minutes per side, until the vegetables are lightly browned and the ravioli get some roasted aromas.
Arrange:
1. Arrange the skewers on a serving platter.
2. Serve with the roasted pepper cream and the herb garlic dip.
