Pea Stew with Smoked Vegan Sausage Alternative

Ingredients

1 pc carrot
1 pc small onion
1 tb oil
150 g peas
1 pc big potato
1 ts thyme
Some salt, pepper

Preparation

1. Finely dice the onion and carrot, and lightly brown them in the oil. Add 1 liter of water, then add the peas. Once it comes to a boil, reduce the heat to low to medium and cook in a tightly closed pot for 60 minutes.
2. Dice the potato, add it to the pea soup along with the thyme, and cook for an additional 30 minutes. Keep checking to make sure the stew doesn't stick to the bottom; if needed, add more water.
3. In the last 5 minutes of cooking time, add the chopped vegan sausage alternative and the VITAM-R. Season with salt and pepper to taste, then serve.
