Oven-Baked Sweet Potato
Preparation
1. Preheat the oven to 150 degrees Celsius (circulating air). Wash the sweet potatoes, halve them, and make cuts about one centimeter deep with a knife in each of the four halves. Then, brush each half with some oil and bake on the middle rack of the oven for at least 30 minutes.
2. Meanwhile, remove the seeds from the pomegranate, chop the onion, slice the spring onions, and dice the seitan. Briefly sauté the seitan in a pan with some oil.
3. Remove the sweet potatoes from the oven, let them cool briefly, and top them with vegan quark alternative, red onion, seitan, pomegranate seeds, and spring onion.
