2 pc red bell peppers

1. Preheat the oven to 220°C (430°F). Quarter and remove the seeds from 1-2 red bell peppers, then place them skin-side up on a baking sheet. Grill them for 5-10 minutes until the pepper skins start to blister. Then, put the peppers in a plastic container or plastic bag. After 15 minutes, you'll be able to easily peel off the skin and cut the peppers into thin strips.
2. Cut 2-3 apples (about 400 g) into small pieces and simmer them until soft in 250 ml of water (5-10 minutes, depending on your preference). Reserve the cooking water.
3. Prepare 500 g of boiled potatoes, peel them, and mash them with 1 tablespoon of margarine, 1 tablespoon of VITAM Scrambled Tofu Seasoning Mix, and the apple cooking water, creating a coarse potato mash. To serve, arrange the simmered apples and pre-roasted bell pepper strips on top of the mash.
