Fully Loaded Sweet Potatoes

Ingredients

For the fully loaded sweet potatoes

4 Piece(s) sweet potatoes
4 Tablespoon(s) DUG potato drink
120 g sweetcorn
1 Piece(s) red (bell) pepper, finely diced
0.5 Piece(s) red onion, finely diced
2 Piece(s) limes, cut into wedges
Some coriander (cilantro) leaves
2 Piece(s) avocados, peeled, pitted and sliced
2 Tablespoon(s) tablespoons finely chopped chilli
Some salt and freshly cracked black pepper

For the toppings

1 Handful sesame seeds
1 Handful hemp hearts

Preparation

1. Preheat the oven to 200 °C and line a baking (cookie) tray with baking parchment.
2. Cut the sweet potatoes in half (to cook quicker) and lay them on the prepared baking sheet. Cook for 30 minutes or until soft.
3. Once roasted, scoop out the inside and mash with the DUG Potato Drink, sweetcorn, pepper, red onion and a squeeze of lime. Season with salt and pepper to taste. Spoon back into the skins. Top each with a quarter of an avocado on each half, a few coriander leaves and a sprinkling of chilli for kick.
