Overnight Oat Carrot Cake

Ingredients

For the overnight oats

200 g oats
2 carrots, peeled and grated
1 ts cinnamon
0.25 ts allspice
0.25 ts nutmeg
2 tb raisins

For the cream cheese (alternative) topping

0.5 pc lemon

Preparation

1. Mix the oats, cinnamon, allspice, nutmeg and raisins in a bowl.
2. Peel and grate the carrots before adding to the bowl.
3. Mix the oat drink with the maple syrup and vanilla extract. Pour over the oat and carrot mixture and decant all into 2 bowls/glasses. Cover and refrigerate overnight.
4. Toast the hazelnuts in a pan before roughly chopping.
5. Mix together all the ingredients for the cream cheese topping.
6. Top with the cream cheese topping and the toasted hazelnuts and enjoy.
